Desserts - Fruit - Fruit-filled Chocolate Tacos

6 servings

1/4 cup all-purpose flour
1/4 cup sugar
1 tbsp cocoa
2 tbsp skim milk
2 tbsp vegetable oil
1 tsp vanilla extract
1 egg white
1/8 tsp salt
1/2 cup sliced strawberries
1/2 cup sliced mangoes
1 kiwifruit, peeled and sliced
1 carambola (starfruit), sliced

Combine flour, sugar, cocoa and next 5 ingredients in a medium mixing bowl; beat at medium speed of an electric mixer until smooth. Cover and chill 2 hours.

Place an 8-inch nonstick skillet over medium heat just until hot. Pour 3 tablespoons of batter into pan; quickly tilt pan in all directions so batter covers bottom of pan in a thin film. Cook about 2 minutes. Flip tortilla, and cook about 1 minute on other side.

Remove tortilla from pan, and drape over tine of a wire rack suspended over a large bowl. Cool 15 minutes. Repeat procedure with remaining batter.

Arrange fruit in chocolate taco shells. Garnish with carambola, if desired

2 Tbsp. butter, melted2 Tbsp. sugar2 Tsp. cinnamon1 peach, peeled and diced1/2 banana, diced8 large strawberries, diced3 to 4 Tbsp. plain yogurt honey or maple syrup for drizzling Cut bread into 1/2 to 3/4-inch thick slices. Toast slices or grill in hot oven for 5 minutes. Brush one side of each slice with hot butter. Combine 1 Tbsp. of the sugar with the cinnamon. Sprinkle evenly over buttered side of each toast. Broil toasts until tops are bubbling. Allow to cool.

1/3 cup All-Purpose Flour 3 tsp. Cinnamon, divided 2 tbl. Sugar, divided 2 Eggs, slightly beaten 1 tbl. Water 4 Bananas 3/4 cup Bread Crumbs 3 cups Oil, for frying Combine flour, 1 teaspoon of the cinnamon, and 1 tablespoon of the sugar. Blend together eggs, water, remaining cinnamon, and sugar. Cut bananas in half crosswise. Roll in seasoned flour, dip in egg mixture, then coat with bread crumbs. Fry in oil heated to 350F degrees until golden brown, about 1 minute. Serve at once.
