Desserts - Frozen Strawberry Souffle

4 cups fresh or frozen strawberries, thawed
1/2 cup sugar


Puree strawberries and sugar in a blender or food processor.

In a large bowl beat 2 egg whites with 1/2 cup sugar until stiff but not dry. Fold in strawberries and whip until double in volume (about 10 minutes). Pour into large glass serving bowl (holds at least 12 cups) and freeze 24 hours. Serve frozen.

2/3 cup sugar 1/2 cup water 2/3 cup light corn syrup 2 tablespoons lemon juice 1/4 large watermelon In a med. saucepan, combine sugar, water and corn syrup. Stir over med. heat until mixture comes to a boil. Without stirring, simmer over low heat 5 minutes. Stir in lemon juice; cool to room temp.
