Desserts - Frozen - Frozen Lemon Pie

4 eggs, separated
1/8 teaspoon salt
juice of two lemons
grated rind of one lemon
3/4 cup sugar
1 teaspoon vanilla
1 cup heavy cream
Vanilla wafers

Combine four well beaten egg yolks, salt, lemon juice, lemon rind and sugar in top of double boiler. Stir constantly until quite thick. Cool, stirring occasionally Add the vanilla.

Beat the egg whites until stiff. Whip the cream until stiff. Fold the egg whites and cream into the lemon mixture.

Crush enough vanilla wafers to cover the bottom of a 9x4" bread pan. Add mixture, top with a few more crumbs. Freeze a few hours.

20 pieces chocolate wafer(s), or vanilla wafers 1 1/4 cup coffee-flavored low-fat frozen yogurt, softened 10 tsp fat-free fudge topping Spread 2 tablespoons of frozen yogurt on top of each of 10 wafers. Drizzle 1 teaspoon of fudge topping over each yogurt-covered wafer. Cover with remaining wafers and gently press together to make sandwiches. Wrap each mud pie in plastic wrap and freeze for 1 hour. Yields 1 per serving.

1-1/4 cups granulated sugar 1/3 cup butter 1 Tbs grated lemon rind 1 cup lemon juice 6 eggs 1-1/2 cups whipping cream Prepare this semifreddo first as it must cool completely. In sauce pan over medium-high heat, heat sugar, butter, lemon rind and juice, stirring until sugar is dissolved. In bowl, beat eggs; whisk hot lemon mixture into the beaten eggs (don’t add eggs to hot lemon mix). Return mixture to the saucepan and cook, stirring, just until boiling; simmer for 1 minute.
