Desserts - Fried Bread Dough

1 tsp salt
2 tsp baking powder
4 eggs, room temperature
1 cup sugar

With a fork mix together the first 4 ingredients. When crumbly, add eggs that have been mixed with sugar.Stir to combine and then add add enough milk to make a medium dough. Knead the dough a few times.

The dough should not be as firm as a typical white bread dough, but not as soft as a rich sweet bread dough. Allow the dough to rest for at least 30 minutes, covered.

Heat 6 cups of Crisco to 370°F. Roll out the dough into a rectangle a little less than 1/4 inch thick and then cut into wedges.

1 envelope dry yeast 3/4 cup warm milk 1/2 tsp. sugar 2 cups flour 2 Tbls. sugar 1/8 tsp. salt 2 eggs, beaten 2/3 cup each chopped apple and raisins 1/4 cup minced candied fruits 1 Tbls. grated lemon rind Mix together the yeast, milk and sugar and let sit for 10 minutes. Combine the flour, sugar, salt with the yeast mixture and add the rest of the ingredients. Mix well with a fork. Cover the bowl with a towel and let the dough rise in a warm place for about 1 hour.
