Desserts - Bread Pudding

2 c. skim milk
1/2 c. liquid egg substitute or 4 egg whites
3 pkg. artificial sweetener
1/2 c. brown sugar
7 slices white bread, broken into small pieces
1/2 t. cinnamon
1 t. vanilla
1/2 c. raisins


Combine everything. Put in 2-quart baking dish. Set baking dish in shallow pan of water so water rises to approximately 1 inch around baking pan. Bake at 350' for 45-50 minutes.

Sprinkle with raisins. Beat eggs together in a bowl. Add sugar, vanilla, cinnamon and nutmeg. Beat. Add milk. Mix. Pour over raisins. Let stand 20 minutes. Bake, uncovered in a 350 degree oven for 45 to 55 minutes until set. Serves 6 to 8.
