Dairy - Peach Ice Cream

4 quarts water
1 1/2 pounds fresh peaches
1 teaspoon fresh lemon juice
1 recipe Old Fashioned Vanilla Ice Cream


Bring water to a rolling boil. Add peaches and cook 1 minute. Drain. When cooled, peel and pit peaches.

Puree half the peach flesh in food precessor along with lemon juice. Prepare and chill custard for Old Fashioned Vanilla Ice Cream.

2 large eggs 3/4 cup sugar 2 cups heavy or whipping cream 1 cup milk 2 teaspoons peppermint extract 2/3 cup Oreo sandwich cookies, coarsely chopped Cover and refrigerate Oreo cookie pieces. Meanwhile, whisk eggs until light and fluffy (about 1 to 2 minutes). Whisk in sugar, a little at a time, until completely blended (about 1 minute).Whisk in cream and milk.Blend in peppermint extract. Transfer mixture to an ice cream maker,then freeze according to manufacturer's instructions. About 2 minutes before ice cream is ready (i.e.: after it stiffens), add Oreo cookie pieces. Continue processing until ice cream is ready.
