Dairy - Oreo Mint Ice Cream
2 large eggs3/4 cup sugar
2 cups heavy or whipping cream
1 cup milk
2 teaspoons peppermint extract
2/3 cup Oreo sandwich cookies, coarsely chopped
Cover and refrigerate Oreo cookie pieces. Meanwhile, whisk eggs until light and fluffy (about 1 to 2 minutes). Whisk in sugar, a little at a time, until completely blended (about 1 minute).Whisk in cream and milk.Blend in peppermint extract.
Transfer mixture to an ice cream maker,then freeze according to manufacturer's instructions. About 2 minutes before ice cream is ready (i.e.: after it stiffens), add Oreo cookie pieces. Continue processing until ice cream is ready. Let stand to allow ice cream to ripen and harden. Makes 1 generous quart.
