Dairy - Old Fashioned Vanilla Ice Cream

2 cups milk
1 1/4 cups sugar
4 egg yolks
2 cups heavy cream
1 1/4 teaspoons vanilla


Combine milk, sugar, and egg yolks in a heavy saucepan over low heat, stirring constantly with a wooden spoon. Continue cookin custard, stirring constantly, until mixture reaches 180 degrees on instant-read thermometer, 5-8 minutes; do not let boil. Mixture will thicken slightly but will not coat back of spoon. Strain mixture. Cover and refrierate until well chilled, about 3 hrs.

3 oz. instant pudding (any flavor) 16 oz. frozen nondairy coffee creamer 1/2 (9 oz.) whipped nondairy topping Mix instant pudding with coffee creamer. Freeze until solid. Remove from freezer and whip until mushy and fold into mixture of whipped topping. Return to freezer about another hour. Serve. Makes slightly less than 1/2 gallon.
