Dairy - Instant Ice Cream

2 c. frozen fruit (blueberries, strawberries, peaches or bananas)
1 c. milk or cream
2-4 tbsp. honey (optional)


Put fruit, milk and honey in blender. Blend on high speed until smooth. You may have to stop the blender, scrape down sides, replace cover and blend some more.

2 eggs beaten 2 cups milk 1 cup firmly packed brown sugar 4 tablespoons instant coffee crystals 1/2 cup Irish whiskey or brandy 2 tea. vanilla extract 2 cups half and half or whipping cream In a med. pan combine beaten eggs, milk, brown sugar and instant coffee. Cook and stir over med-low heat until sugar and coffee dissolves and mix thickens slightly. Remove from heat; stir in whiskey or brandy. Cool to room temp. stir in vanilla and cream. Pour into ice cream canister and freeze.

1 c. milk 1 c. whipping cream 1/2 c. sugar 1/2 t. vanilla extract Nuts or fruit, if desired Crushed ice Rock salt Place all ingredients except crushed ice and rock salt in a 1 lb.coffee can with a tight fitting lid. Secure lid with masking tape. Place coffee can in a larger 3 lb. coffee can with a tight fitting lid. Pack crushed ice around smaller can, sprinkle 3/4 c. rock salt around top. Secure lid . Roll back and forth for 10 min., check, mix ice cream with spatula, secure lids, roll for 5 more minutes.
