Crock_pot - Soup - German Potato Soup

1 pound bacon -- cooked and diced
1 onion -- chopped
1 leek -- trimmed and chopped
2 carrots -- peeled and diced
1 cup chopped cabbage
1/4 cup chopped parsley
4 cups beef broth
1 pound potatoes -- washed and diced
1 bay leaf
2 teaspoons black pepper
1 teaspoon salt
1/2 teaspoon caraway seed
1/4 teaspoon nutmeg
1/2 cup sour cream

Combine onion, leek, carrots, cabbage, parsley, broth, and potatoes to Crock-Pot. Stir in seasonings. cover and cook on Low 8 to 10 hours or High 4 to 5 hours. Remove bay leaf.

Using a slotted spoon remove potatoes and mash. Combine potatoes with sour cream. Return to Crock-Pot and stir. Stir in bacon pieces. Serve.

Serves 6 to 8

For the 6-quart, use 6 cups of beef broth, 2 leeks, 3 carrots,dices, and 2 pounds of potatoes. Season as desired.

1 pound navy beans 2 ham hocks 8 ounces bacon, cooked, drained and torn into bite-sized pieces 1-1/2 cups finely chopped onion (about 1 medium-sized onion) 2 cloves garlic, finely minced 1 large stalk celery, thinly sliced 1 cup half-and-half 5 cups water Salt and black pepper, to taste Combine ingredients in a large crock pot, cover and cook on LOW setting for 8 to 10 hours. If mixture seems too thick, add small amounts of water during last hour of cooking, as desired. Yield: 6 to 8 generous servings.

1 lb. skinless, boneless chicken 1 large red potato 1 1/2 cups frozen corn 1 medium onion chopped 1/2 cup celery chopped 3 Tbl. Dijon mustard 1/4 tsp. pepper 1/8 tsp. garlic powder 2 1/2 cups vegetable juice 1 can chicken broth Rinse chicken, cut into bite-size pieces. Combine everything in crockpot; pour veggie juice and chicken broth over all. Cover and cook on low 8-10 hours or on high 4-5 hours. Serves 6.
