Crock_pot - Austrian Goulash

4 large onions, chopped fine, (4 cups)
1/4 cup vegetable oil
3 pounds pork stewing meat, cubed
7 garlic cloves, finely chopped
1/4 cup caraway seeds
1/4 cup paprika
2 bay leaves
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
4 cups sauerkraut, drained.

In a large Dutch oven, brown onions in oil. Add meat, garlic, caraway seeds, paprika, bay leaves, salt and pepper. Mix well; add water to cover. Bring to boil. Reduce heat, cover and simmer 1 hour until meat is tender, adding water if mixtures seems dry. Stir in sauerkraut; cook 15 minutes until hot. Discard Bay leaves. Serve with Bread dumplings

** This works well in a crock pot.

1 (2 lb.) boneless rolled pork loin roast 3/4 tsp salt 1/8 tsp pepper 3 large dark orange sweet potatoes, peeled, and thinly sliced 1 medium onion, sliced and separated into rings 3/4 tsp dried thyme leaves 1 quart apple juice Sprinkle Pork Roast with 1/4 tsp of salt and pepper place in 4 qt crockpot. Place sweet potatoes around and on top of roast. Top with onion; sprinkle with thyme and remaining 1/2 tsp salt. Pour over apple juice. Cover and cook on low for 6 to 8 hours or until pork is fork tender. With

3- 4 pound pork roast 1/4 c soy sauce 1/4 c orange marmalade or apricot preserves 1 T catsup 1 garlic clove (or more)- crushed Combine soy sauce, marmalade, catsup and garlic. Brush all over the roast. Place in a crockpot and pour remaining sauce over all. Cover and cook on LOW all day, at least 10 hours.
