Cookies - Zucchini Bars By Deb

2 c. sugar
1 tsp salt
1 c. vegetable oil
2 tsp baking soda
3 eggs
1/4 tsp baking powder
2 c all purpose flour
3/4 c. rolled oats
2 c. grated zucchini
1 c. chopped walnuts
2 tsp. vanilla

Combine all ingredients and mix well. Spoon into a greased 15x10 1/2 x 1 inch jelly roll pan. Bake at 350 for 15 - 20 minutes or until golden brown. Cool. Frost with Icing.

1/2 c butter or margarine, softened
1- 3 oz. pkg cream cheese, softened
1/4 tsp almond flavoring
2 1/2 c powdered sugar
2 tsp vanilla

Cream together butter and cream cheese. Add vanilla, almond and powdered sugar. Beat til smooth and frost bars.

3/4 c. margarine 1 3/4 c. flour 1/2 c. granulated sugar 1 1/2 tsp. baking powder 1/2 c. brown sugar 2 c. shredded zucchini 2 eggs 1 c. shredded coconut 1 tsp. vanilla 3/4 c. chopped nuts Icing: 1 c. powdered sugar 1 tsp. vanilla 2 1/12 T. milk 1/2 tsp. cinnamon 1 1/2 T. melted margarine Cream margarine, sugars, eggs and vanilla. Mix in remaining ingredients well. Bake in greased 15x10" baking pan for 40 min. Cool. Mix icing ingredients, and spread over cookies. Cut into bars. Makes about 3 doz.

4 1/2 cups Quaker® Oats uncooked 1 cup packed brown sugar 3/4 cup butter or margarine melted 1/2 cup dark corn syrup 1 tablespoon vanilla 1/2 teaspoon salt (optional) 1 (12-ounce) package semi sweet chocolate pieces 2 tablespoons shortening 2/3 cup chopped nuts Heat oven to 450 degrees and grease 15 x 10 inch pan. Combine oats, sugar, butter, corn syrup, vanilla and salt; mix well. Firmly press mixture into pan. Bake 12 minutes or until mixture is brown and bubbly. Cool completely. In saucepan over low heat, melt chocolate and shortening, stirring constantly until smooth. Spread evenly
