Cookies - Shortbread Squares
1 cup (2 sticks) softened butter3/4 cup sugar
1 egg
1 tsp. vanilla
2+1/4 cups all purpose flour
2 cups semi sweet chocolate mini morsels, divided
Preheat oven to 350F
In large mixer bowl beat butter and sugar until creamy. Beat in egg and vanilla. Gradually add the flour. Stir in 1 cup chocolate morsels. Spread batter (use a knife) into ungreased 13"X9" baking pan. Bake 30 to 33 minutes or until top begins to brown.
Remove from oven and immediately sprinkle the remaining cup of chocolate morsels on the hot cake. Let stand 5 minutes or until morsels become shiny and soft. Spread over cake. Cool 10 minutes and cut.
