Cookies - Rolled Cookies Lady Lock Cookies

1 cup butter
1 cup margarine
1 pound cottage cheese, creamed
4 cups all-purpose flour
1/2 teaspoon salt
4 tablespoons all-purpose flour
2 teaspoons vanilla extract
1 cup shortening
2 cups confectioners' sugar
6 tablespoons marshmallow creme
1 cup milk


Cream together butter, margarine, cottage cheese, salt and 4 cups of flour. Shape into a large square, cover and chill overnight.

Cut dough into 4 quarters. Roll each quarter out individually, about 1/8 inch thick. Cut into 8 inch strips, as wide as you like.

Roll over tubes (or use clothespins covered with aluminum foil). Bake at 375 degrees F (190 degrees C) until brown.
To make Filling: Cook milk and 4 tablespoons of flour until thick paste forms. Let cool completely. Beat shortening and confectioner's sugar until fluffy. Add marshmellow cream and vanilla. Then add COLD paste and beat. Fill tubes with cream filling. Sprinkle with confectioner's sugar just before serving.

4 1/2 ounces cream cheese 1 cup butter 2 cups sifted flour Jelly or Orange Marmalade Preheat oven to 375° F.Cream cheese, butter and flour and form into a dough. Roll out thin on lightly floured board and cut into 2 inch circles. Bring two sides together to form a cornucopia or lily. Fill open end with a little dab of jelly or marmalade. Bake 15 minutes in 375 degree oven. Cool. Sprinkle with powdered sugar.Yields 5 dozen. I have used preserves instead of jelly, jelly tends to run too much. Also have mixed in finely chopped nuts with preserves.

4 cups Sifted Flour 2 T. Sugar 1 lb. Butter 1 pint Vanilla Ice Cream (softened) Preheat oven 350º. Blend flour and sugar. Cut in butter and melted ice cream and mix. Form into ball. Wrap and chill overnite. Roll out dough on floured surface to about 1/4" thickness. Cut in circles (a 2" cookie cutter works super). Take about a teaspoon of filling and and place on each circle. Fold over both sides of the circle to meet in the middle. Bake 20-25 minutes on a ungreased cookie sheet.
