Cookies - Rolled Cookies Cinnamon Pecan Cookies

1 1/4 cups unsalted butter, room temperature
2/3 cup granulated sugar
2 cups unbleached all-purpose flour
1 3/4 cups ground, toasted pecans
1 teaspoon cinnamon
1/2 teaspoon vanilla extract
1/2 teaspoon grated lemon rind

Cream butter and sugar with a mixer until light and fluffy. Beat in flour, pecans, cinnamon, vanilla and lemon rind. Wrap dough in plastic; refrigerate at least an hour.

Preheat oven to 350 degrees.

On a lightly floured surface, roll out dough to 1/8-inch thickness. Cut into desired shapes with cookie cutters; place on greased cookie sheets. Bake 10 to 12 minutes, until lightly browned. Makes about 2 dozen cookies, depending on cookie-cutter size.

1 c sifted flour 1 tsp baking powder 1 tsp ground cinnamon 1/3 c butter (one third cup) 2/3 c sugar (two thirds cup) 3 tbsp milk Preheat the oven to 350. Sift the flour, baking powder and cinnamon together then set aside. Cream the butter until it is softened, then gradually add the sugar. Cream it together until fluffy. Alternately add the dry ingredients with the milk, making four dry ingredient additions and three milk additions, beginning and ending with dry ingredients. Mix until well blended after
