Cookies - Pumpkin Brownies

2 cups all-purpose flour
2 cups sugar
2 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. cloves
1/2 tsp. salt
1 cup vegetable oil
2 cups pure pumpkin puree (canned is fine)
4 eggs, beaten
1 cup raisins, softened* (optional)

2 cups icing sugar
1/3 cup margarine or butter, softened
1 package (3 oz.) cream cheese, softened
1 Tbsp. milk or orange juice
1 tsp. vanilla

Preheat oven to 350 degrees. Grease and flour a 10x15x1" jelly roll pan.

*Measure raisins and let stand in hot water for 5-10 minutes. Drain well.

In a large bowl, blend all brownie ingredients. Fold in raisins, if desired. Pour into prepared pan. Bake for 25-30 minutes or until toothpick inserted in centre comes out clean. Cool completely.

In a small bowl, combine frosting ingredients; beat until smooth. Spread over bars. Cut into bars. Refrigerate leftovers.

1/4 c Vegetable oil 3 Squares unsweetened chocolate 1 1/4 c Granulated sugar 1/2 c Applesauce 4 Egg whites or -2 eggs, slightly beaten 1 t Vanilla 1 c QUAKER® Oats uncooked - (quick or old fashioned) 1 c All-purpose flour 1 t Baking powder 1/4 ts Salt (optl) 1 tb Powdered sugar Heat oven to 250° F. and lightly spray bottom only of 13 x 9-inch baking pan with no-stick cooking spray. In large saucepan, melt oil and chocolate over low heat, stirring frequently. Remove from heat. Stir in granulated sugar and applesauce until sugar is dissolved.

1/4 cup (1/2 stick) margarine or butter 2 eggs 1 tsp. vanilla 2 Tblsp. all-purpose flour 1-1/2 cups coarsely chopped pecans 1/4 cup packed brown sugar 1/4 cup corn syrup 1 pkg. brownie mix (plus ingredients on box for mix) Heat oven to 350 degrees F. Melt margarine in a 2-quart saucepan; stir in flour until smooth. Mix in brown sugar, corn syrup, and eggs until well blended. Cook over medium heat 5 minutes, stirring constantly. Remove from heat. Stir in vanilla and pecans.
