Cookies - Pressed Cookies Sprotz Cookies By Pj

1 cup butter, softened
2/3 cup sugar
3 egg yolks
1 teaspoon almond extract
2 1/2 cups all-purpose flour


Heat oven to 400 degrees. Mix butter, sugar, egg yolks and flavoring thoroughly. Work in flour. Using one-fourth at a time, force dough through a cookie press onto ungreased baking sheet in desired shapes. Bake 7 to 10 minutes, or until set but not browned. Yield: 6 dozen

You can tint the dough, sprinkle colored sugar on cookies before baking, or decorate as desired.

1 1/3 cups finely ground blanched almonds 1 1/2 cups powdered sugar grated lemon rind dash of salt 2 egg whites Preheat to 300. Grease cookie sheets. Mix the dry ingredients together, then add the egg whites and mix. Place dough in a pastry bag with a star tip and force onto cookie sheet. Bake for 30 minutes. Remove from cookie sheet while still warm. These should be light golden brown but soft inside.

1 cup butter or maragine 1/2 cup sugar 1 egg 1/2 tsp salt 1 tsp vanilla 21/4 cups flour Heat oven to 400 degrees. Mix butter, sugar, egg, salt and vanilla thoroughly. Work in flour. Using 1/4 of dough at atime, force through a cooky press on ungreased baking sheet in desired shapes. Bake 6 to 9 minutes or until set butnot brown. Cool. Makes about 5 doz cookies. Both these recipes are great dipped in chocolate after baking and cooling. Or you can spread jam (I used raspberry)
