Cookies - Pressed Cookies Caramel Cookies

3 1/2 cups sifted flour
1 teaspoon salt
1/2 teaspoon soda
1 cup Crisco shortening
3/4 cup dark brown sugar
3/4 cup white sugar
2 eggs
2 teaspoons vanilla


Preheat oven to 350 degrees F.

Sift together the first three ingredients. Cream shortening and gradually add the both sugars. Gradually add the flour mixture. Fill the cookie press and form cookies on a ungreased cookie sheet. Bake 350 degrees for 10 to 15 minutes.
Yield: 70 cookies

3/4 cup butter 1 3/4 cups flour 1/2 cup sugar 1 egg yolk 3/4 teaspoon almond extract 1/4 teaspoon baking powder In a large bowl beat butter on medium to high speed about 30 seconds. Add about half of the flour, add sugar, egg yolk, almond and baking powder. Add the rest of the flour. Beat until thoroughly combined. Do not chill dough. Pack dough in cookie press.
