Cookies - Merry Mincemeaters

2 1/2 cups sifted all-purpose flour
1/2 teaspoon cinnamon
1/4 teaspoon salt
3/4 cup butter
2/3 cup sugar
1 egg (reserve 1 tablespoon egg white for top)
1 teaspoon almond extract
1 1/2 cups mincemeat
1/3 cup almonds or pecans optional

Preheat oven to 350º. Grease baking sheet.

Sift together flour cinnamon and salt. Cream butter. Add sugar, creaming well. Blend in egg (less 1 reserved tablespoon) and almond extract. Beat well. Stir in dry ingredients; mix thoroughly.

Roll out half dough on greased baking sheet to a 10 x 8-inch rectangle. (Baking sheet will not slip if placed on damp cloth.) Spread with 1 1/2 cups mincemeat.

Roll out remaining dough between sheets of waxed paper to a 10 x 8-inch rectangle. Remove top sheet; invert dough over mincemeat. Remove paper. Brush with egg white, slightly beaten. Sprinkle with nuts if desired.

Bake 25 to 35 minutes until light golden brown. Cool and cut into bars.

Grease rectangular pan, 13x9x2 inches. Beat sugars, butter, peanut butter, and egg in large bowl with electric mixer on medium speed. Stir in flour, oats, baking soda, and salt. Spread in pan. Bake 17 to 22 minutes or until golden brown. Cool completely on wire rack, about 15 minutes.
