Cookies - Frosted Pumpkin Squares

2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon salt
4 eggs
1 can pumpkin (16 oz.)
1 1/2 cups sugar
1 cup vegetable oil
1 teaspoon vanilla extract


Preheat oven to 350 degrees.

Sift together flour, baking powder, soda, cinnamon, nutmeg, and salt; set aside.

In a large mixing bowl beat together remaining ingredients. Gradually add flour mixture to wet mixture; beat well. Spread batter into a 9 x 13 inch pan sprayed with and non-stick cooking spray.

Bake for 25 to 30 minutes. Cool on wire rack. Cool completely before frosting with your favorite frosting recipe.

Yields 2-3 dozen squares
