Cookies - Formed - Egg Yolk Cookies

1 c. shortening
1 1/2 c. sugar
6 egg yolks
2 1/2 c. flour
1 tsp. soda
1 tsp. cream of tartar
1 tsp. vanilla
1/2 tsp. lemon flavoring

Mix in order given (shortening, sugar, egg yolks, flour, soda, cream of tartar, vanilla and lemon flavoring, adding soda and cream of tartar to flour. Roll into small balls. Dip in sugar and flatten on cookie sheet. Bake at 350 degrees for 8 to 10 minutes. Makes 60 cookies.

2 cups flour 1/2 teaspoon baking soda 1/4 teaspoon salt 1 cup brown sugar 1/2 cup butter 1 egg 1 teaspoon vanilla Topping: 1 cup chopped walnuts 1/2 cup brown sugar 1/4 cup sour cream Sift together dry ingredients. Cream brown sugar and butter. Add egg and vanilla. Cream again. Add dry ingredients. Mix till blended. Form into 1 inch balls, make a depression in center, place 2 inches apart on an ungreased cookie sheet. Mix together topping ingredients. Place topping in depressions. Bake at 350F for 12-14 minutes.

1 (15.6-oz.) pkg. Pillsbury® Cranberry Quick Bread & Muffin Mix 1/2 cup finely chopped walnuts or pecans 2/3 cup butter, melted 1 egg 1 tablespoon sugar Heat oven to 350°F. In large bowl, combine quick bread mix, walnuts, butter and egg; mix well. Shape dough into 1 1/4-inch balls. Place 3 inches apart on ungreased cookie sheets. With glass dipped in sugar, press each to 1/8-inch thickness. Bake at 350°F. for 7 to 10 minutes or until light golden brown around edges. Remove from cookie sheets. High Altitude Instructions: No change.
