Lazy Sugar Cookies
1/2 cup butter
1/2 cup shortening
1/2 cup sugar
1/2 cup powdered sugar
1 1/4 teaspoons vanilla
1 egg
1/2 teaspoon cream of tartar
1/2 teaspoon baking soda
1/2 teaspoon salt
2 1/4 cups flour

Cream sugars and shortenings. Add vanilla and egg. Add dry ingredients. Roll into balls. Flatten with glass or cookie
cutters dipped in sugar. Bake at 350° for 10-12 minutes. Easily doubled or tripled.

1 teaspoon baking powder 1 teaspoon baking soda ½ teaspoon salt 1 ¼ cups sugar ½ cup applesauce ¼ cup canola oil 2 tablespoons fresh lemon juice 4 teaspoons freshly grated lemon zest In a large bowl, whisk flour, baking powder, baking soda and salt. In another bowl, whisk 1 cup sugar, applesauce, oil, lemon juice and lemon zest until smooth. Make a well in the dry ingredients and add wet ingredients. Stir until blended. Cover with plastic wrap and refrigerate until chilled, 30 minutes to 1 hour. ( The dough will keep in the refrigerator for up to 3 days.)

Add sugar gradually and cream together thoroughly. Add eggs, reserving one yolk for glaze. Beat well. Blend in juice, vanilla, and grated rind. Stir in the dry ingredients. Knead well until dough is smooth and does not stick to your fingers. Pinch off pieces and roll on board lightly
