Cookies - Formed Cookies Chinese Almond
3 cups flour1 cup sugar
1/2 teaspoon soda
1/2 teaspoon salt
1-1/2 cups shortening
1 egg, beaten
1 teaspoon almond extract
Blanch almond halves or red food coloring for garnish
Preheat oven to 350 °F. Sift dry ingredients into a large bowl. Knead in shortening, working thoroughly (8 to 10
minutes). Add almond extract to egg, then stir into flour mixture. Mix well.
For each cookie, shape 1 tablespoon dough into ball. Place on ungreased baking sheet, using your thumb to make a depression in the top of each cookie.
Either press an almond half into the the thumbprint *or* dip the blunt end of a chopstick into red food coloring and press into top of each cookie. Bake for 15 to 18 minutes. Makes 6 dozen cookies.
