Cookies - Drop Cookies Zuccini Drop Cookies

1 c margarine or butter
1 c packed brown sugar
1 egg
1 1/2 tsp vanilla extract
1 cup grated unpeeled zucchini
2 to 2 1/4 c flour
1 tsp baking powder
1 tsp baking soda
1 1/2 tsp cinnamon
1 1/2 tsp nutmeg
1 c shredded coconut
1 c chopped walnuts


Preheat oven to 350°.

In large bowl, beat together butter or margarine, brown sugar, egg and vanilla until light and fluffy. Stir in zucchini. Add flour, baking powder, baking soda, cinnamon, nutmeg and salt. Add additional flour if needed. Add coconut and walnuts. Drop by tablespoons on ungreased pan, 2 inches apart. Bake 10 to 12 minutes or until lightly browned.

PRUNE OR "LEKVAR" FILLING 3/4 c. Water or orange juice 1/3 c. Lemon juice 2 c. Pitted prunes 1 c. Dark raisins 1/3 c. Sugar 1/4 ts. Cinnamon 1/2 c. Walnuts (optional) Method: 1. In a small saucepan over low heat, place the water or orange juice, lemon juice, prunes, raisins (sometimes Isubstitute more prunes for the raisins), sugar & cinnamon. Toss & stir fruit over low heat to soften prunes & plump the raisins, if using, about 8-10 minutes.Make sure bottom doesn't stick, lowering heat if mixture starts to boil. Remove from heat & place mixture in a foodprocessor bowl.

1 C. shredded zucchini 1 egg 1 t. vanilla 2 1/3 c. flour 1 t. soda 1/2 t. cinnamon 1/2 t. salt nuts optional Cream shortening, sugar. Add zucchini, eggs and vanilla. Add dry ingredients. Drop by teaspoon on cookie sheet bake 350 - 15 min. Drizzle with frosting when cooled. Frosting: 3 T. butter - 1/2 c. brown sugar, 4 tsp. milk, 1 tsp. vanilla and 1 c. powdered sugar. Combine margarine, milk and brown sugar over low heat until melted. Remove from heat and add remaining ingred.
