Cookies - Drop Cookies Rolled Orange Cookies

1/2 cup butter
3/4 cup sugar
1/4 teaspoon baking powder
1 1/2 teaspoons grated orange peel
1/4 cup milk
1 cup all purpose flour

Preheat oven to 350 degrees.

Beat the butter in mixing bowl with electric mixer on medium to high speed for 30 seconds. Add sugar, baking powder and orange peel and beat until combined. Beat in milk and flour.

Drop batter from a level tablespoon at least 3 inches apart on a well-greased cookie sheet, baking only two or three cookies at a time. Spread batter into 3 inch circles. Bake in 350 degrees oven for 8 to 10 minutes or until golden brown around the edges.

Let cool on cookie sheet for 30 to 60 seconds. Loosen and remove cookies from cookie sheet one at a time. Place cookie upside down on a table or countertop and quickly roll it around the greased handle of a wooden spoon or a dowel. Slide cookie off and cool on wire rack. Repeat with remaining warm cookies.

Makes about 24.

2 cups self raising flour 1/4 tsp. mixed spice 1/3 cup butter 1/3 cup castor sugar 2 tbsp. sultanas (white raisins) seedless 2 tbsp. currants 1 tbsp. mixed peel 1 egg -- beaten 1/2 cup milk. Preheat oven to 220°c(425°f). Sift flour and spice together, rub butter into flour(with finger tips), add sugar, fruit and peel. Mix with enough milk to form a stiff dough. Place spoonfuls of mixture on a greased oven tray (cookie sheet) and bake until golden brown,10-15 minutes, cool on a cake cooler (wire rack). Makes around 24. Cut in half and spread with butter.
