Cookies - Drop Cookies Pudding Sugar Cookies
1 cup butter, softened1 cup vegetable oil
1 cup sugar
1 cup confectioners sugar
2 eggs
1 tsp vanilla extract
1 pkg. (3/4 oz) instant lemon pudding mix or instant pudding mix of your choice.
4 cups of flour
1 tsp. cream of tartar
1 tsp. baking soda
In a large mixing bowl, cream the butter, oil and sugars. Beat in the eggs, vanilla and dry pudding mix.
Combine the flour, cream of tartar and the baking soda; gradually add to creamed mixture.
Drop by tablespoonfuls 2 inches a part onto ungreased cookie sheets. Flatten with the bottom of a glass dipped in sugar. Bake at 350 degrees for 12 to 15 min. or until lightly browned. Remove to wire racks.
Yields: 7 dozen.
