1 medium orange
1/2 cup (125 mL) shortening
2 tblsp (30 mL) granulated sugar replacement
or granulated fructose
1 egg
2 cups (500 mL) flour
1/2 tsp (2 mL) baking powder
1/2 tsp (2 mL) baking soda
1/4 tsp (1 mL) salt
1/2 cup (125 mL) buttermilk

Preheat oven to 375°F and lightly grease cookie sheets.

Juice and grate rind of orange; remove seeds from juice.

Cream together shortening and sugar replacement.

Add egg, orange juice and grated orange rind, beating until light and fluffy.

Combine flour, baking powder, baking soda and salt in sifter, and add alternately with
buttermilk to creamed mixture. Stir to blend.

Drop by teaspoonfuls onto lightly greased cookie sheets, 2 to 3 in. (5 to 7 cm) apart.

Bake at 375 degrees F (190 C) for 10 to 12 minutes.

Peel of 1 large navel orange 2 T potato starch or corn starch 1/2 cup sugar 1 cup blanched almonds 1 t cinnamon 1/2 t nutmeg 2 egg whites Processor method Pre-heat oven to 350* and line a cookie sheet with greased foil. Remove peel from orange with sharp knife or zester, trying not to get any white pith (it's bitter) Beat egg whites and set aside. Insert metal blade. Place peel, starch and sugar in work bowl. Process for 30 seconds. Add almonds and spices and process until almonds look like bread crumbs but not too fine (about 3 minutes)
