Cookies - Drop Cookies Oatmeal Raisin Chews

2 1/4 cups all-purpose flour
1 tsp. baking soda
1/4 tsp. salt
1 cup quick oats ( not instant)
1 cup dark brown sugar, packed
1/2 cup white sugar
1 cup salted butter, softened
2 Tbsp. honey
2 tsp. pure vanilla extract
2 large eggs
1 1/2 cups (8 oz) raisins
1/2 cup (2 oz) walnuts, chopped (optional)

Preheat oven to 300*.

In a medium bowl combine flour, soda, salt and oats. Mix well with wire whisk and set aside.

In a medium bowl blend sugars with electric mixer set at a medium speed. Add butter and mix to form a grainy paste. Scrape down sides of bowl, then add honey, vanilla and eggs. Mix at medium speed until fully combined.

Add the flour mixture, raisins, and walnuts, and blend at low speed just until combined. Do not overmix.

Drop by rounded tablespoons onto greased cookie sheets, 2 inches apart. Bake for 18 - 22 minutes or until cookies are light golden brown. Immediately transfer cookies with spatula to a cool flat surface.

Yield: 2 1/2 dozen with walnuts

1 cup butter 1 cup sugar 2/3 cup brown sugar 1 single egg 2 1/2 cup quick oatmeal 1 cup flour 1 cup coconut 1/2 tsp. salt 1 tsp. vanilla 1/2 tsp. soda dissolved in 2 T. hot water Mix all ingredients. Drop on ungreased cookie sheet and bake in 425 degree oven. Watch them carefully because they burn easily. They usually take me about 9-10 minutes. Remove while they still look a little gooey. Let them sit a minute before removing from pan.
