Cookies - Drop Cookies Oatmeal Macaroons

1 cup butter
1 cup sugar
2/3 cup brown sugar
1 single egg
2 1/2 cup quick oatmeal
1 cup flour
1 cup coconut
1/2 tsp. salt
1 tsp. vanilla
1/2 tsp. soda dissolved in 2 T. hot water

Mix all ingredients. Drop on ungreased cookie sheet and bake in 425 degree oven. Watch them carefully because they burn easily. They usually take me about 9-10 minutes. Remove while they still look a little gooey. Let them sit a minute before removing from pan.
