Cookies - Drop Cookies Oat Delights

3 cups oats
2 cups sugar
6 Tbsp. (slightly heaping) cocoa
1/2 cup margarine
1/2 cup milk
1/2 tsp. vanilla extract

Grease or line with foil, two cookie sheets.

Premeasure coconut and oats. Set aside. In a 4 quart saucepan combine sugar, cocoa, margarine and milk. Bring to a boil over medium-high heat, stirring slowly. Let boil one minute. Remove from heat. When boilng stops, add vanilla, stir. Stir in coconut and oats until well coated with chocolate mixture. Drop by teaspoonfuls onto prepared cookie sheets. Chill for at least one hour. Keep covered in refrigerator.

NOTE: If preparing these on an electric stove, use the large burner. For some reason I can't get these cookies to set

Cream together Crisco and sugar. Add eggs, mixing well. Sift together flour, salt, nutmeg and cinnamon.Add dry ingredients alternately with shortening-egg mixture and the milk. Mix in oats, raisins andcoarsely chopped walnuts. Bake on greased cookie sheet 350 - 375 oven 10- 13 minutes.

Bake at 375 degrees for 8-10 minutes, or 10-12 minutes for a crispier cookie.
