Cookies - Drop Cookies Meringue Cups

Meringue cups..

3 eggs separated
1/2 t vinegar
1/4 tsp vanilla
1/8 tsp salt
1 cup sugar


IN a mixing bowl combine egg whites, vinegar, vanilla and salt and beat until soft peaks form. Gradually add in sugar beating until stiff peaks form.

Cover baking sheet with parchment paper or brown paper bag cut to fit sheet. Spoon egg mixture into eight mounds and shape into cups with a spoon.

Bake at 300 degrees for 35 minutes. Shut off oven and let sit in oven to dry for at least one hour with door closed. Store in air tight containers.

4 egg whites 1 cup sugar 1 cup pecan pieces 1/8 tsp salt 1 tsp. vanilla Add salt to the egg whites beat until stiff.adding the sugar slowly while beating.Fold in remaining ingredients, Drop by teaspoon on ungreased cookie sheet. Bake for 1 hour and 15 min in a 225 degree oven . Turn off oven and leave cookies in to cool or overnite. Bake on lowest rack in oven.
