These cookies are left overnight in the oven.

2 egg whites
1 teaspoon vanilla extract
1 pinch salt
1 cup semisweet chocolate chips
1/2 cup chopped walnuts (optional)
1/4 cup white sugar

Preheat oven to 325 degrees F (170 degrees C). Beat egg whites with the salt until foamy. Slowly add sugar, one tablespoonful at a time, beating after each addition until the meringue stands in stiff peaks.

Stir in vanilla and fold in chocolate chips and nuts if using. Drop by teaspoonfuls on a lined baking sheet and place in preheated oven.

5 cups cornflakes 1/2 cups sunflower seeds 1/2 cup sesame seeds 200 g. nibbed almonds 1 tin condensed milk rice paper Mix all ingredients together and drop on rice paper. Bake in a 180 (350)oven till golden Fruit Florentines 500 g. fruit cake mix 2 cups cornflakes 100 g. pecan nuts- chopped 1 small cup cherries -chopped 1 tin condensed milk Mix all ingredients and drop spoonfuls onto rice paper. Bake in a 180 (350) oven till golden. Coat underside or sprinkle on top melted chocolate.
