Cookies - Cinna-munchy Crunchy Squares

1/4 cup (1/2 stick) margarine or butter
3 cups miniature marshmallows or 20 large marshmallows
1/4 teaspoon ground cinnamon
5 cups Cinnamon Toast Crunch® cereal

Grease square pan, 8x8x2 or 9x9x2 inches.

Place margarine and marshmallows in large microwavable bowl. Microwave uncovered on High 1 1/2 to 3 minutes, stirring after 1 minute, until mixture is melted and smooth when stirred. Stir in cinnamon. Stir in cereal until well coated. Press mixture in pan with buttered back of spoon; cool. Cut into about 2-inch squares. 16 squares.

Range-top Directions: Heat margarine and marshmallows in 3-quart saucepan over low heat, stirring frequently, until melted; remove from heat. Continue as directed.

1/2 cup butter, softened 1/2 cup margarine, softened 1 cup sugar 1 egg yolk 2 cups sifted flour 1-1/2 tablespoons cinnamon 1 teaspoon salt 1 egg white 1/2 cup chopped walnuts or pecans Preheat oven to 300 degrees F.Cream the butter, margarine and sugar in a mixer bowl until light and fluffy. Beat in the egg yolk. Stir the flour, cinnamon and salt together. Fold gently into the creamed mixture. Spread in a greased 9x13-inch baking pan. Beat the egg white in a mixer bowl until stiff peaks form. Spread over the batter; sprinkle with the nuts. Bake

1 cup butter 2/3 cup confectioners sugar 1 tsp. vanilla extract 1 1/2 cups all-purpose flour 1/4 cup cocoa 1/4 tsp. salt Confectioners sugar In a large bowl, cream butter, sugar and vanilla. In another bowl, combine flour, cocoa and salt. Stir flour mixture into butter mixture. Wrap dough in plastic wrap and chill 30 minutes. Preheat oven to 300 degrees. Press dough into a 15x10x1 inch jelly roll pan. Bake 30 minutes. Remove from oven and cut out warm shortbread in pan using a 2 inch wide heart shaped cookie cutter. Remove cookies from pan and cool on wire rack.
