Cookies - Chocolate Truffle Brownies

1-1/4 cup semi-sweet chocolate chips
1/2 cup butter
3/4 cup brown sugar
2 eggs
1 teaspoon instant coffee crystals
2 tablespoons water
1/2 teaspoon baking powder
3/4 cup flour

Preheat oven to 350 degrees F.

Melt chocolate chips and butter, cool slightly. In a mixing bowl, beat eggs and sugar together. Mix the coffee and water, add to egg mixture. Add chocolate and mix well.

Stir in flour and baking powder, mix well. Spread into a 9"x9" greased pan, bake for 30-35 minutes at 350 degrees. Cool on rack.

Truffle Filling:
1 cup semi-sweet chocolate chips
1/4 teaspoon instant coffee crystals
8 oz. cream cheese, softened
1/4 cup powdered sugar
1/3 cup seedless red raspberry jam

Melt chocolate with coffee crystals over low heat. In a mixing bowl, beat cream cheese until fluffy; add powdered sugar and jam and beat until fluffy. Fold in the chocolate, mixing until well blended. Spread over the top of the cooled brownies.

1/4 cup semi-sweet chocolate chips
1 teaspoon unsalted butter

Melt the chocolate and butter in a small heavy pan over low heat. Drizzle over truffle mixture.

Chill the brownies at least one hour before cutting into them.

2 - 2 1/2 cups grated zucchini 1/2 cup ripe mushed banana 1 T water 1 egg 2 tsp vanilla 2 cups flour 1 1/2 tsp baking soda 1/2 tsp salt 1/2 cup cocoa powder 2/3 cup sugar 1 cup chopped pecans 1 cup good quality chocolate chips Mix together zucchini, banana, water, egg, and vanilla. In another bowl, mix together remaining ingredients. Fold dry ingredients into wet, batter will be stiff. While putting batter into pan, sprinkle on chocolate chips and with the back of a spoon or spatula press chocolate chips slightly into batter.

1 egg 1 cup brown sugar, packed 3/4 cup Hershey’s® chocolate syrup 1 1/2 cups flour 1/4 tsp. baking soda dash of salt 1/2 cup butter 3/4 cup chopped pecans or walnuts Preheat to 350. Beat egg, then add sugar and chocolate syrup. Sift the flour, baking soda and salt together, then add to the sugar and egg mixture. Fold in the butter and nuts. Spread in a well greased shallowed 9 inch square pan. Bake for 35 to 40 minutes. Cut into small squares while warm. Yield 16 brownies.
