Cookies - Chocolate Raspberry Streusel Squares
Yield: 36 Servings1 c Butter, chilled
1 1/2 c Flour
1 1/2 c Oats; uncooked
1/2 c Sugar
1/2 c Firmly packed brown sugar
1 tsp Baking powder
1/4 tsp Salt
1 c Raspberry preserves
1 c (6 oz) chocolate chips
1/4 c Chopped almonds
1/2 c Semisweet chocolate chips or 1 bar (4 oz) white chocolate, melted
Preheat oven to 375°.
Cut butter into combined flour, oats, sugars, baking powder and salt until mixture is crumbly. Reserving 1 cup of the mixture, press remainder into a 9" square baking pan. Bake 10 minutes.
Spread preserves over crust, top with chocolate chips. Add almonds to reserved crumbs; sprinkle over chips, patting in gently. Bake 30-35 minutes or until golden brown. Cool completely before cutting.
Drizzle melted chocolate over and let set up before cutting into bars.
