Cookies - Chewy Chocolate Chip Cookies

1 cup butter or margarine, softened
3/4 c. packed brown sugar
1/4 c. sugar
1 pack. (3.4 oz.) instant vanilla pudding mix
2 eggs
1 tsp. vanilla
2 1/4 c. all purpose flour
1 tsp baking soda
2 c. semi sweet choc. chips
1 c. finely chopped walnuts


In a mixing bowl, cream butter, sugars, and pudding mix. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour and baking soda; gradually add to the creamed mixture. Stir in chocolate chips and walnuts (dough will be stiff).

Drop by rounded teaspoonfuls 2 in. apart onto ungreased baking sheets. bake at 350* for 8-10 min. or until lightly browned. Remove to wire racks to cool.

Yield: 9 1/2 doz.

1 can condensed milk 21 graham crackers, crushed (1 1/2 c.) 3 tbsp. milk 1 pkg. chocolate bits 1/4 c. chopped nuts (optional) Mix milk and condensed milk. Add finely crushed graham crackers, chocolate bits and nuts. Spread in well greased and floured pan (10x15 inch).

2 large egg whites 1/4 teaspoon cream of tartar 1/3 cup sugar substitute 1 teaspoon almond extract 2-1/4 cups grated coconut Preheat oven to 375 degrees F. Place the egg whites and cream of tartar in a large bowl. Beat until stiff peaks form. Continue beating, adding the sugar substitute. Fold in the almond extract. Then fold in the grated coconut. Mixture will be stiff. Drop by teaspoonfuls onto a nonstick cookie sheet. Bake 20 minutes. Remove macaroons to a wire rack to cool. Cookies will be 1" in diameter.
