Cookies - Bars - Lemon Squares

1/2 cup butter
1/4 cup powdered sugar
1 cup flour
pinch of salt
2 eggs, slightly beaten
1 cup sugar
1 Tbsp. flour
2 Tbsp. lemon juice
1 tsp. grated lemon rind


Preheat oven to 350º.

Combine butter, powdered sugar, flour, and salt. Pack firmly in an 8x8 ungreased pan. Bake 15-20 minutes until lightly brown.

Combine eggs, sugar, flour, lemon juice, and rind. Mix until well blended. Pour over hot crust. Bake 20 minutes longer. Cool, cut into squares, then sprinkle with powdered sugar.
