Casseroles - Vegetable - Tex Mex Squash Dressing

3 cups cooked yellow squash
1 can (10-3/4 oz.) condensed cream of chicken soup
1 medium onion, chopped
1 tsp. sage
1/2 stick (4 Tblsp.) butter or margarine
1 pkg. Mexican cornbread, baked according to package directions
1 cup grated cheddar cheese
Salt and pepper to taste


Layer in baking dish. Mix in squash, cornbread, sage, salt, pepper, onion and oleo. Add cream of chicken soup; top with grated cheese. Bake at 350 degrees F. for 45 minutes.

2 lbs. hot pork sausage 1 (10 3/4 ounce) can cream of Chicken soup 8 oz. French onion dip (Barber's, or your favorite )* 1/2 cup green pepper chopped 30 oz. frozen shredded hash browns, thawed 2 cups shredded cheddar cheese 1 cup sour cream 1 cup chopped green onion 1/2 cup red pepper, chopped salt & pepper to taste. Cook and drain sausage, and set aside Combine the rest of ingredients. Put half of the mixture into a greased 9x13 pan. Sprinkle with the sausage. Cover with remaining potato mixture. Bake at 350º for 45 minutes, or until golden.
