Casseroles - Vegetable Sweet Potato

3 C. mashed sweet potatoes.
1/2C. evaporated milk
1/2 stick (1/4 cup) melted butter
3/4C. granulated sugar
1 tsp. cinnamon
2 eggs
1/2 tsp. salt
Hickory nuts, optional
Chocolate chips, optional

Preheat oven to 375.

Grease casserole dish.

Mix together the first 7 ingredients and pour into prepared casserole.

Add nuts, if desired.

Bake covered, for 35 min.

Sprinkle with chocolate chips, if desired, return lid to dish for about 5 minutes to allow chips to melt.

3 cups mashed sweet potatoes 1/2 cup sugar 2 beaten eggs 1/2 t. salt 1/2 stick unsalted butter 1/2 c. half and half 1 t. cinnamon 1/2 t. nutmeg Combine and put in buttered 9" baking pan. Topping: 1/2 c. light brown sugar 1/3 c. flour 1 c. finely chopped pecans 1/3 stick melted unsalted butter Combine and sprinkle over potatoes. Bake in preheated 350 degree oven for 35 minutes or until top is crispy.

2 lbs. yellow squash, cut into 1/4" slices 1 c. chopped sweet onion 3/4 c. chopped sweet red pepper 1/4 c. butter 1 large egg, beaten 1 c. shredded cheddar cheese 1 can water chestnuts, drained and chopped 2/3 c. Miracle Whip 1 tbsp. sugar 1/4 tsp. each salt and pepper Cook squash in salted water by bringing to a boil, cover, reduce heat and simmer 10 min. DRAIN WELL and put aside. Saute onion and red pepper in butter about 4 min. Combine all ingredients together and spoon into lightly greased baking dish. Bake at 350 for 30-35 min.
