Casseroles - Vegetable Sweet Potato
3 C. mashed sweet potatoes.1/2C. evaporated milk
1/2 stick (1/4 cup) melted butter
3/4C. granulated sugar
1 tsp. cinnamon
2 eggs
1/2 tsp. salt
Hickory nuts, optional
Chocolate chips, optional
Preheat oven to 375.
Grease casserole dish.
Mix together the first 7 ingredients and pour into prepared casserole.
Add nuts, if desired.
Bake covered, for 35 min.
Sprinkle with chocolate chips, if desired, return lid to dish for about 5 minutes to allow chips to melt.
