Casseroles - Vegetable - Sweet Potato Casserole By Clayton

3 cups mashed sweet potatoes (fresh cooked or canned)
1 cup sugar
pinch of salt
1/3 cup melted butter
1 Tablespoon vanilla
1 cup milk

Topping:
1/3 cup butter (melted)
1 cup light brown sugar
1/3 cup flour
1 cup chopped pecans


Mix casserole ingredients. Spread in a 9 x 9-inch dish. Mix topping as listed, drop by spoonsful on top of potatoes. Places not filled in with topping will be fine, as it will spread while baking. Bake uncovered, for 35 minutes.

2 cups mashed sweet potatoes 12 large marshmallows 3/4 cup finely crushed cornflakes 1/2 cup packed brown sugar 2 tablespoons milk 1/4 cup butter or margarine Bake sweet potatoes for 1 hour or so at 450º until a knife slides in with absolutely no resistance. Mash 1 sweet potato and put in bottom of casserole dish. Tear marshmallows and layer on top. Cover with remaining mashed sweet potatoes and top with cornflakes. In a saucepan, bring remaining ingredients to a boil, and pour over all. Bake, uncovered, 15 minutes at 350º.

2 large cans sweet potatoes 1/2 cup oatmeal 1/2 cup flour 1/2 cup brown sugar 1/2 bag fresh cranberries 1/4 cup butter or margarine Drain sweet potatoes and put in a 2 1/2 quart casserole. In small bowl mix, flour, oatmeal and brown sugar. Pour this and the cranberries over the potatoes and mix together carefully. Dot with margarine. Preheat oven to 350 degrees. Bake for about 35 to 40 minutes.
