Casseroles - Vegetable - Spinach Bake

2 Onions chopped
1 lb. Mushrooms coarsely chopped
8 carrots coarsely chopped
1 zuchinni coarsely chopped
40 oz. fresh spinach chopped
1 Cup Matzah Meal
6 to 9 eggs (you decide the consistency you'd like best)
2 Telma chicken boullion cubes (or you can use veggie or onion)

Heat oven to 325 -- Prepare 9 x 13 pan -- grease well.
Saute onions, carrots, zucchini and mushrooms in 2 Tbl. oil for a few minutes until they just start to get a little soft.

Combine all ingredients together in a big bowl. Mix thoroughly (hands work best!)
Put into prepared pan. Bake 45 mins to 1 hour. Should be firm and set.

This also freezes really well.

(Andrea added: I think it would also work well if you wanted to add some grated cheese. I think Monterey Jack, Swiss or Mild Cheddar would work best.)

1 (10 oz.) pkg. frozen chopped spinach 1-1/2 cups cottage cheese 1-1/2 cups grated cheddar cheese 2 eggs slightly beaten 3 tablespoons flour 1 tablespoon dried chopped onion 1/2 teaspoon salt 1/2 cup bread crumbs 2 tablespoons melted butter Place frozen spinach package in an 8 x 8 x 2 inch ovenware glass or ceramic dish. Cut package and cook in carton with microwave for 5 minutes. Remove cooked spinach from package and drain. Combine cooked spinach in dish with next 6 ingredients. Combine bread crumbs with melted butter and sprinkle evenly over top of casserole. Cook with microwave

5 medium Potatoes, sliced 1 (10 3/4 oz.) can Cream of mushroom soup 3 oz. Cheddar cheese, grated 1 Tbls. Onion, minced 2 tsp. Parsley flakes 1/4 tsp. Salt 2 Tbls. Spicy mustard 1/8 tsp. Garlic powder 1/8 tsp. Horseradish Preheat oven to 350 degrees F.Combine all ingredients except potatoes in saucepan. Heat until cheese is melted. Mix with potatoes in large baking dish.
