Casseroles - Vegetable - Creamy Squash Casserole

1 1/2 pounds of tender yellow squash, sliced
1 (10 3/4 ounce) can of cream of chicken soup, undiluted
1 (8 ounce) container of sour cream
1 (4 ounce) jar of sliced pimentos, drained
1 (8 1/2 ounce) can of sliced water chestnuts, drained
2 medium onions, finely chopped
1 stick of butter or margarine
1 (8 ounce) package of herbed stuffing mix


Cook the squash in salted water until tender, about 12 to 15 minutes and drain well. Add the first five ingredients to the squash. Melt 3/4 stick of the butter and add to the stuffing and mix well. Pack the stuffing mixture into a 2-quart baking dish reserving 1 cup of the stuffing mixture. Pour the squash mixture over the stuffing and sprinkle the top with the reserved cup of the stuffing. Dot the top of the casserole with a little butter and bake for 30 minutes at 350 degrees.

2 cans (10 3/4 ounce each) condensed cream of potato soup, undiluted 1 cup (8 ounces) sour cream 1/2 teaspoon garlic salt 1 package (2 pounds) frozen hash brown potatoes 2 cups (8 ounces) shredded cheddar cheese 1/2 cup grated Parmesan cheese In a large bowl, combine the soup, sour cream and garlic salt. Add potatoes and cheddar cheese; mix well. Pour into a greased 13" x 9" x 2" baking pan. Sprinkle with Parmesan cheese. Bake, uncovered, at 350° for 55-60 minutes or until potatoes are tender and the top is lightly browned. Yields: 12 to 16 servings

5 sweet potatoes, cooked and cooled grated rind of 1 orange 1/2 c. orange juice 1/4 c. dark brown sugar 1 c. whole cranberries 1/8 tsp. salt Grease a 10 x 6 x 2-inch shallow baking dish. Place in a preheated 375 degrees oven and bake for 30 minutes.
