Casseroles - Vegetable - Broccoli Casserole By Sandyoh

2 (10 oz.) packages frozen chopped broccoli
1/2 cup mayonnaise
1/2 cup sour cream
2 eggs -- beaten
1 can cream of celery soup
1 onion -- chopped fine
Crushed Ritz crackers or other crackers
Grated sharp cheese


Cook and drain the broccoli; spoon into a buttered oblong casserole. Combine all ingredients, except crackers and cheese and stir into broccoli. Top with crackers and cheese. Bake at 425° F. for 15 to 20 minutes.

2 packages 10-oz frozen chopped broccoli 1 (10 3/4 oz.) can cream of mushroom soup 3/4 - 1 cup mayonnaise (use 1 C if you prefer a creamier casserole) 1 small onion, finely chopped 2 eggs, beaten salt and pepper to taste 1 cup shredded sharp cheddar cheese 2 cups bread crumbs (see note) 3/4 stick butter, melted Preheat oven to 350 degrees F. Cook broccoli according to package directions; drain well. Combine soup, mayonnaise, salt and pepper, onion, and eggs in large bowl. Stir in broccoli and 1/2 cup of the cheese. Put into a greased 2-quart casserole dish.

6 tablespoons butter 2 tablespoons flour 1/2 cup water 1 jar (8 ounces) processed American cheese spread 2 packages frozen chopped broccoli, thawed and well drained 3 eggs, well beaten 1/2 cup soda cracker crumbs Sauté onion in 4 tablespoons of the butter until soft. Stir in flour. Add water. Cook over low heat, stirring, until mixture thickens and comes to a boil. Blend in cheese. Combine sauce and broccoli. Add eggs; mix gently until blended. Turn into greased 1-1/2 quart casserole. Cover with cracker crumbs. Dot with remaining butter. Bake at 325 degrees for 30 minutes. SERVES: 6 - 8
