Casseroles - Rice - Grandmother's Rice Dish

1 cup brown rice, or white, cooked
2 (7 oz.) cans green chilis, chopped
3/4 to 1 lb. Jack cheese, grated
1 (8 oz.) carton of sour cream

Preheat oven to 350 degrees F.

Mix chili's, and rice and divide in half. Grate cheese and divide in thirds.

Place 1/2 rice mixture in baking dish, 1/3 cheese, sour cream, 1/3 cheese, 1/2 rice and 1/3 cheese. Bake 350 for 40 minutes. May be prepared and refrigerated one day in advance.

2 1/2 cups cooked rice 3/4 cup chopped parsley 1/3 cup grated Cheddar cheese 1/4 cup chopped onion 3 tbsp. chopped green pepper 1 small clove garlic, minced 12 oz. evaporated milk 2 small eggs, beaten 1/3 cup vegetable oil 2 tsp. salt 1/4 tsp. seasoning salt 1/4 tsp. pepper 1/4 tsp. Accent juice and grated rind of 1/2 lemon Paprika Mix rice, parsley, cheese, onion, green pepper and garlic in a greased 2 quart casserole. Blend in remaining ingredients. Sprinkle with paprika. Bake at 350 for about 45 minutes or until the consistency of a soft custard.

From USA Serves: 8 1 cup uncooked rice 2 cups sour cream Lawry Salt, to taste 1/4 pound Monterey Jack cheese 1/4 pound provolone cheese 1 (4 oz.) small can chopped green chilies Parmesan cheese, grated butter Cook rice according to directions on the package until almost done. Preheat oven to 350 degrees F. Combine rice with sour cream and season with salt to taste. Shred cheeses. Spoon a layer of rice over the bottom of a lightly greased casserole dish. Sprinkle with half the cheese and green chilies. Repeat layers and top with grated Parmesan cheese. Dot with butter. Bake,
