Casseroles - Poultry Chicken Black Bean Casserole

Source: Spirit of Christmas Volume 2.

2/3 cup fresh lime juice
1/3 cup olive oil
1/2 teaspoon black pepper
2 teaspoons garlic powder,divided
2 teaspoons salt, divided
1 1/2 pound boneless, skinless chicken breast, cut into bitesize
pieces
4 cups cooked white rice
2 cans ( 15 oz each) black beans
1 cup finely chopped cilantro
1 teaspoon onion powder
1 taspoon chili powder
1 teaspoon ground cumin

In a medium bowl, whisk lime juice, oil, pepper, 1 teaspoon garlic powder and salt.

Add chicken; stir until evenly coated. Cover and
refrigerate 2 hours.

In a 2 quart casserole, combine rice, undrained beans, cilantro, onion powder, chili powder, cumin, remaining garlic powder and salt; set aside.

Preheat oven to 350 degrees.

Using a slotted spoon, place chicken in a large skillet.

Cook over medium heat until juices run clear when chicken is pierced with fork.

Stir chicken into rice mixture Cover and bake 40 to 45 min or until heated through.

Toss into a pretty serving bowl and sprinkle with Parmesan cheese or shredded Monterey Jack.

Makes 9 -1 cup servings.

1/2 cup melted butter1/4 to 1/2 cup olive oil 1 roasting chicken or two broilers, cut up 2 tsp salt 1 8 tsp pepper 1 tablespoon oregano juice of two lemons potatoes, peeled and cut into wedges Preheat oven to 425. Heat butter and oil together. Pour half mixture into roasting pan. Lay pieces of chicken in pan. Sprinkle with salt, pepper and oregano. Mix remaining oil mixture with lemon juice; baste chicken.Surround Chicken with potatoes. Bake 1 3/4 hours, basting 2 to 3 times during the cooking process.
