Casseroles - Pork Sausage Hot Pot

1 pound bulk sausage (Bob Evans Zesty)
8oz of pasta (bowties, rigatoni or anything you like)
12 oz can of stewed/cut tomatoes
1 can Campbells onion soup
1 package of frozen chopped spinach (thawed)
salt
pepper
hot pepper (cayenne)
Italian seasoning
Mozzerrella cheese (whole milk)

Saute sausage in saucepot. When sausage begins to give off drippings, add RAW pasta. Add red cayenne pepper, salt, peper, and Italian seasong (quantities you like).

Saute sausage and pasta together till sausage is browned. Add tomatoes, soup, and spinach. Add a little less than half can of water. Bring to boil, then cover and reduce to simmer for about 25 minutes. Stir occasionally. After about 20 or 25 mins, slice cheese on put on top (I use lots) and cover till cheese completely melts, usually another 5 minutes or so.

1 lb. smoked sausage, sliced 1/2" thick 4 cooking apples, cored and sliced 1 tsp. caraway seed 1 pkg. 16oz. sauerkraut 2 Tbls. brown sugar 3 Tbls. bacon drippings In a buttered casserole place a layer of sausage; top sausage with half of the apples. Add caraway seed tosauerkraut and spread over apples. Top sauerkraut with remaining sausage and apples; sprinkle on brown sugar.

1/2 pound sausage 1 pound lean ground beef 1 envelope dry chicken noodle soup 2 cups boiling water 1 cup chopped celery 1/2 cup chopped onion 1/4 cup chopped green bell pepper, optional 1/4 teas. salt 1/4 teas. pepper 1/2 cup uncooked regular rice (brown or white) 1/2 cup sliced almonds, optional Preheat oven to 350 F. Brown meats in a skillet on med. high heat. Drain off and discard any fat. In a 2 1/2 quart casserole combine the drained meat with remaining ingredients. Sprinkle almonds over top, if using. Bake covered for 1 hour.
