Casseroles - Mexican Fiesta Bake
8 oz. ground turkey or beef1/2 c. chopped onion
1/4 c. green pepper
1/2 c. canned, sliced mushrooms, drained
1 c. frozen corn
1 c. tomato sauce
1 T. chili seasoning
3/4 c. Bisquik baking mix
3/4 c. chunky salsa
1/3 c. shredded Cheddar cheese
Preheat oven to 350'. In large skillet, sprayed with Pam, olive oil flavored, brown meat, onion, and green pepper. Add
mushrooms, corn, tomato sauce, and chili seasoning mix. Stir well to blend, Pour into 8X8 inch baking dish, sprayed with Pam.
In medium bowl, combine Bisquik and salsa. Add cheese; mix well. Spread evenly over meat mixture. Bake 25-30 minutes.
