Casseroles - Ham And Potato Bake By Lois

(Sorry, no quantities, you can play it by ear)
Potatoes, cubed and amost cooked
Ham, cubed
Cheese sauce
Frozen peas, thawed under hot water
Dijon mustard - the grainy kind
Grated cheddar or a similar cheese

Mix a good dollop of mustard into the cheese sauce
Combine all ingredients, stir well to blend

Season - salt, pepper, hot pepper flakes (optional) dried herbs, HP sauce, ketchup - whatever you like

Heap into greased baking dish (the mixture should be moist but not too sloppy)

Top with grated cheese Bake 30 mins. in 375 oven.

First cook two cups of noodles until they're tender. 1/2 pound leftover ham, cubed 1/2 pound sharp Cheddar cheese 1 tea. horse-radish, optional 1/2 cup chopped green pepper 1 can condensed cream of mushroom, chicken, or celery soup thinned with 1/4 cup milk. Mix everything together, including the noodles and bake , covered in buttered casserole 350 degrees 40 minutes.
