Casseroles - Chicken Hot Chicken Salad By Verla

3 3/4 c. cooked diced chicken, 6 breasts
1 3/4 c. mayonaise
2 1/2 c. diced celery
2 1/2 c. cooked rice
1 1/4 c. almonds
2 1/2 tsp. chopped onion
2 tsp lemon juice
1 1/4 tsp. salt
7 eggs---hardbloiled, peeled, and chopped
Crushed potato chips for topping

Preheat oven to 375° F.

Combine all ingredients in casserole.

Cover with potato chips.

Bake for 30 minutes.

Hotel Nauvoo Wild Rice Casserole 4 cups cooked wild rice 1 (10 1/2 oz) can condensed mushroom soup 1/2 cup chicken gravy 2 cups diced cooked chicken or turkey 1 cup soft bread crumbs 2 tablespoons melted butter or margarine Preheat oven to 350° F.Combine rice, soup, gravy, and chicken or turkey. Turn into 2 quart casserole. Toss together bread crumbs and melted butter; sprinkle over top. Bake in 350 degree oven for 50 to 60 minutes. 8 servings

2 cups cooked chicken pieces 1 cup diced celery 1/2 cup slivered almonds 1 Tbsp. lemon juice 3 hard boiled eggs 1 cup cream of mushroom soup 1/2 onion, minced 1/2 tsp. salt 1/4 tsp. pepper 1/2 cup mayonnaise 2 cups cracker crumbs (could use potato chips) Preheat oven to 350 ° F.Combine all of the ingredients, except for the crackers or potato chips.Put in a greased casserole dish. Top with crumbs or potato chips. Bake for 20 inutes.
