Casseroles - Breakfast - Chili Egg Puff

10 eggs
1 lb. Monterey Jack cheese, shredded
1/2 cup flour
4 oz. jar diced jalapeno peppers
1 tsp. baking powder
1 pint creamed cottage cheese
1 tsp. salt


Preheat oven to 350 degrees F.

Beat eggs until light and fluffy. Add rest of ingredients and blend well. Pour into greased 9 X 13 baking dish. Bake at 350 degrees until brown and center is firm -- about 35 minutes.

12 slices bread, crusts removed 1 (8 oz.) package sharp Cheddar cheese, grated 1 (8 oz.) package Swiss cheese, grated 1 lb. Canadian bacon, thinly sliced 6 eggs, beaten 3 cups milk 1/2 tsp. salt Alternate layers of bread slices, cheeses, and bacon in 7x11 inch baking pan until all are used. Beat eggs with milk and salt in bowl. Pour over casserole. Cover. Refrigerate overnight. Bake at 325 degrees for 50-60 minutes.

1 (8 oz.) pkg. Brown 'n Serve sausage or kielbasa, cut in 1/2-inch thick pieces 5 slices bread, torn in pieces 1 c. grated Cheddar cheese 5 eggs, slightly beaten 2 c. milk 2 tsp. dry mustard Place bread pieces on the bottom of a buttered 8 x 8-inch shallow casserole dish. Place sausage evenly over top of bread. Sprinkle with cheese. Stir together eggs, milk and mustard. Pour evenly over cheese. Cover. Refrigerate overnight. Bake uncovered at 350 degrees for 50 to 55 minutes or until knife inserted near center comes out clean.
